One of my favorite things to have for dinner is chicken fajitas. They are super fast and always yummy. Depending on our mood we have grilled chicken or just sliced it up and cooked it on the stove. Both very tasty options. Most of the time we just season with homemade fajita or taco seasoning, because we can control the flavor and sodium. While I usually do eat tortillas with the chicken and veggies, I’ve also been known to forgo the carbs. Now I want fajitas again!
I’m trying to get back in the swing of breakfast before I leave for work. If I eat breakfast at work it’s usually something fast, like a protein bar or Belvita biscuits, maybe a waffle with almond butter. Since breakfast is my favorite I really like to take the opportunity to cook myself some eggs. This particular instance was fresh spinach with some leftover fajita veggies from dinner the night before. I sauteed everything until it was warm then poured in eggs. Originally I was going for an omelette but since the peppers added some bulk it all fell apart. Still tasted yummy along side some wholly guac and fresh watermelon cubes.
I decided to try some color layering with my Lipsense. I’ve been using Aussie Rose regularly and hadn’t tried out the Blu-Red I purchased at the same time. So I decided to give it a try by mixing the two.
The first layer of three is Aussie Rose, the second layer of three is Blu-Red and the third and final layer is Aussie Rose again. It turned out brighter than I expected but it is a nice pop of color! I’m excited about trying three layers of Blu-Red and hope to purchase the Matte gloss top coat soon.
Since I’m not doing any major traveling this summer I’m anxious to plan something for next summer. I really wish I’d been able to see more of NYC when I went last September so I think that’s what I’m going to plan. I’m going to hope for at least a long weekend, but in a perfect world, I’ll spend at least five days there. I have such a list of places I want to see and restaurants I want to eat at. Also, it would give me much needed time to spend with my lovely friend Kelly and her family in New Jersey. I’m pretty excited about the prospect.
Wednesday night’s dinner was inspired by the pulled pork sandwich we had in Kauai last October. My mother and I have been thinking about it ever since so I went on pinterest, looking for something similar, but with chicken since we don’t often eat pork. The recipe I found and used is from Lemon Tree Dwelling and it turned out great. We didn’t put the macadamia nuts in the slaw because someone in our house doesn’t care for nuts but I can only imagine how amazing it is with them.
My weekend plans are up in the air right now. I was going to Nashville Flea Market with my mother but it’s supposed to be a “feels like” temperature of 115. Even with getting there super early in the morning it would be hard on my mother’s asthma. Maybe I’ll convince her to check out some local shops she’s been wanting to go in since we would be indoors.

This PESTO TURKEY MEATLOAF. I mean, I love turkey meatloaf. I love pesto. This pretty much looks like perfection to me.
I think I’m going to start making these Funfetti Gooey Bars once a month, to take to my office for coworkers with birthdays during that month.
