Lots of food. Lots.

I don’t have a ton to share this week but I managed to take photos of almost every meal I ate starting with Tuesday. AREN’T YOU EXCITED? I’ve been trying to think outside the box when it comes to getting vitamins via my food so this particular morning I threw in some roasted veggies we had at dinner a few days before, to go with my boiled eggs, cantaloupe, and gluten free toast.

I usually bring leftovers from dinner for lunch but on this Tuesday I decided a salad sounded good. I don’t like eating heavy meals in summer…or any time of year really, so this hit the spot. These readypac salads are so convenient because I can have a salad with fun ingredients and not have to buy random things that will most likely go to waste at my house since I would be the only one eating the stuff.

Tuesday night my mother made the Skinny Taste Shepherd’s Pie and it was really delicious! I don’t recall ever eating shepherd’s pie but my mom says she made it a lot when my brother and I were kids. You cant go wrong with mashed potatoes, veggies, ground meat, and a savory sauce. Gina also has a version topped with sweet potatoes that I really want to try. After having this amazing meal it made me start wondering about other flavor combos to throw in there, instead of making it traditional. Like what about a shepherd’s pie with mexican flavors?!

My mama slays it again, bless her. She’d been ‘craving’ a peach cobbler she said. At first I declined because I’m really not that into cooked fruit but the cobbler topping is my jam so I caved. I ate a little of the peaches because I didn’t want to be THAT PERSON that only dipped out the crust. I’ve been trying to eat dairy free but hahaha what self respecing southerner would eat cobbler without ice cream?! Also, vanilla bean is my weakness.

For breakfast on Wednesday, I had a bagel on the fly then more Shepherd’s pie for lunch. I’m sad it’s all gone because I want more as I write this post and look at these photos.

Then Wednesday dinner consisted of lasagna using the recipe my late grandmother mailed to my mother when my dad was stationed in New Mexico. I haven’t had this in years but it tasted just as amazing as I remembered. My mother used to make this lasagna a lot when I was growing up. You can’t tell from the photo but the baking dish is piled high and it boiled over some. When mom would make it for us she would also make a pan for my grandparents because my Pawpaw loved it too. Every summer he would take fishing trips up at my great grandfathers cabin and mom would make a pan for him to take along for the trip. I was always jealous that my brother and our cousin got to go with him and I did not, being younger. Note: I did not and do not like to fish but I still wanted to be invited!

Thursday breakfast was Belvita Golden Oats in the car, driving to work, then lunch was another Ready Pac salad. This was wasn’t as good as I’d have liked because there wasn’t any chicken and I really need the extra protein. I should have thought ahead and packed some leftover chicken from our fridge. Alas. I did not.

We rounded up Thursday with stuffed baked potatoes from Lawler’s BBQ, which I ate half of. I don’t really do BBQ most of the time but they have chicken…or turkey…or whatever and it’s really tasty. I will be having the rest for lunch today, because I only ate half last night. It’s a massive potato! I imagine tonights dinner will be takeout or leftovers since it’s Friday and we are just DONE with this week. It’s been a long one. I’m swamped at work (note the eating at my desk, which I know is not healthy) and will be much the same the next couple of weeks. I’m lucky though because I do love my job!

Are you a dry shampoo person? I definitely have not been in the past. I’ve only ever tried one other before this one and it made my scalp itch. I was afraid to try another one, especially one that is pricey, because of this reason. I have spots of scalp psoriasis when the weather changes or when I get stressed out so I’m always worried about what I use on my hair. I’ve been using Pureology shampoo and conditioner for a while now and love it so I decided to try the dry shampoo. I. Love. It. I really do. It doesn’t make my scalp itch and I don’t get a white residue and my hair looks clean. I’ve been washing it once a week and using this halfway through the week and it’s working out well for me. Thankfully, I don’t really have oily hair but I did average washing my hair twice a week, sometimes every other day, depending on my exercise schedule.
