Hey y’all!! Today started my second round of Fit Girl Guide 28 Day Jumpstart Challenge. I’ve even created a separate instagram account for all of my progress photos and such. If you follow me there you know I promised to share some links to recipes I used for this week. There’s a few additional photos and links from recipes I’ve made and loved from the last couple of months. You’ll probably see some of these on repeat as I continue these posts. I’ll also share a list of some of my favorite food blogs at the end of the post.
First off, the english muffin sandwich is the Makeahead Freezer Friendly Breakfast Sandwiches I’ve been making for about a month now. I usually have one with fruit of some sort, like this plum. The sandwiches have become a staple because the recipe makes 12 and you can do pretty much any variation you want. For this week I added chopped fresh spinach to my eggs.
This is my lunch for the week! I’ve been trying to eat all veggie meals with the exception of dinner, due to trying to lower my cholesterol. Plus, I’m not much of a meat eater anyway. This recipe is from WholeFully and it’s amazing! I added extra broccoli, chick peas, and zucchini, since we have a ton at home. I also wanted to turn this into five meals instead of the four the recipe makes. I also only made myself 1/4 a cup of brown rice because carbs. I really love this one and it’s worth trying out!
This is another quick, tasty breakfast recipe I’ve used recently. This broccoli and cheddar quiche is crustless and so easy! A serving is a fourth of the quiche, which is huge. I used all egg whites (the kind in a carton), reduced fat cheddar, broccoli, and added tomatoes for some color. Hungry Girl knocked this one out of the park.
We’ve made these Spinach Lasagna Rolls more times than I can count. They are easy and fast, plus delicious. I usually add garlic even though the recipe doesn’t call for it. This photo is from my leftover dinner I had a couple of nights after making these. They freeze really well too, which is a bonus!
This cauliflower rice is YUM! Even if you aren’t a cauliflower rice person. We made this about a month ago and it’s on the menu for this week too. It’s another quick dinner, especially if you use the cauliflower rice from the freezer section (which we do). This would probably be a great lunch prep recipe too.
This Chili Lime Chicken has become one of our favorite chicken marinade recipes for tacos and fajitas. I’ve tried a lot of homemade taco and fajita seasoning recipes but this has been my favorite. I think it’s the brown sugar that really rounds it out.
